Throughout her journey, Carol embraced several careers, showcasing her diverse talents and unwavering dedication. She was a remarkable seamstress, lovingly crafting extraordinary Halloween costumes for her children and grandchildren, which became cherished memories of joy and laughter during the festive season. Her most recent role as a school crossing guard filled her heart with joy, allowing her to connect with the community's children and ensure their safety each day.
Carol's passion for life shone brightly in the kitchen, where she delighted in cooking and baking for the holidays, gathering family around the table to share stories and create lasting memories. Her loving nature extended beyond her culinary skills; she was known for her generosity, always ready to lend a helping hand to those in need. A true friend and sister, Carol's spirit was a source of comfort and support to many.
Her love for sewing extended into her hobbies, where she demonstrated her remarkable knack for handiwork around the house, and her adventurous side was revealed in her trips to the casino with friends and family, where laughter and excitement abounded.
Carol leaves behind her beloved daughters Marlene Lopez, Tracy Rodriguez and Kim Di Fabio, son-in-law Philip Di Fabio, and cherished son Mark Montalvo. Carol's legacy continues in her precious grandchildren—Melissa, Jackie, Christopher, and Joshua—alongside her great-grandchildren, Sabrina, Robert, DJ, Jenesty, and Alora. She is lovingly remembered by her sisters, Norma Delgado, Stella Castro, and MaryAnne Rosa, as well as many close relatives and friends who were fortunate enough to know her kind gentle and feisty spirit.
Carol was preceded in passing by Robert, the love of her life, alongside her parents, Gregory Castro and Esther Castro, and her sisters, Rosemary Montalvo and Melba Castro, and brother Gregory Castro.
A visitation to celebrate Carol's life will be held on November 16, 2025, from 3:00 PM to 7:00 PM at T.M. Ralph Funeral Home Sawgrass/Weston in Sunrise, FL. A Mass in her honor will take place on November 17, 2025, at 11:00 AM at Saint Gregory The Great Catholic Church in Plantation, FL, followed by her burial at Our Lady Queen of Heaven Cemetery at 12:30 PM.
